I found this quite impressive video and was wondering what goes into it.

One of the comment hints at PBD...

What methods could be involved?

Would Obi assets be able to achieve something like this?

This really looks like tetrahedral FEM. Could be using traditional velocity-based dynamics or position-based dynamics, there’s no easy way to tell from the video as they both look identical under normal circumstances. The only difference between them is that in velocity based solvers, you constrain velocities and integrate positions, while in PBD you constrain positions and derive velocities.

Obi is a purely particle-based (meshless) aproach so there’s no way to achieve that kind of precise collision detection against geometry faces, or constrain a rope to pass trough a specific point on a face. You really need a 1-1 physical representation of the mesh to do this, and the most straightforward way to do this on a volumetric object is discretizing it using tetrahedra.
